high five: store-bought spinach.

a nyt article reveals a boon to store-bought spinach. due to the continual exposure to (artificial) light and therefore extended photosynthesis, the leaves might actually gain some nutrients while hanging out on the shelf waiting for me to eat them. since not all of us are lucky enough to grow our own bounties (wink), it's nice to know that sometimes store-bought leaves aren't necessarily less nutritious. nevermind the pesticides.
